Hi Everyone,
I’m so exited to finally have my “Healthy Living Tips” up and running. I would like to take a moment and tell you a little of my journey with living a healthy lifestyle. This is one of my passions, to learn more of how we can live strong, well treating our bodies the best we can.
I was brought up to eat a vegetarian lifestyle, most of my life I ate a clean way of eating. In 2011 my husband was having some health issues. He tried to go the conventional way, going to doctors and being put on medication, but with out success I could see we were going to have to try another way. Since I had some knowledge of living more of a homeopathic lifestyle we decided to go that route. We found an awesome Doctor here  our area, I made a commitment to my husband that I would do whatever the doctor said to do.
To my surprise my whole way of eating was about to change forever! Due to his issues we were going to eat a 
candida diet which is basically; grass fed beef, organic poultry, & wild caught fish, organic greens, nuts & seeds, and a couple of low sugar fruit per day. I was on the fast track to learn how to cook meat, and be creative with our meals. I could not even use eggs for the first 4 months. I thought what I have gotten myself into…
In time, we lost a lot of weight, within a short time I was getting the hang of my new lifestyle, learning so many new things. I started to feel better, and better as the days went by. My husband was starting to show great results as well.
It’s been 2 1/2 years since I totally change my eating habits, I love it! I am now just shy of being 58 years old, I feel the best I have ever felt.  I do exercise three times a week with a trainer, my good friend Joyah Snyder. I feel strong, definitely starting to see the changes!!!
   I want  to challenge you to start to take a look at your health lifestyle, possibly seeing where you can improve so that you can have a healthy body. I mostly eat a Paleo Diet which is very much like I started 2 1/2 years ago, pretty much staying away from grains & legumes and anything WHITE!!! I will be sharing some of the things I do, along with great recipes. I promise you will not go without. Most important is to find what works for you and your lifestyle. Start with small baby steps (choices) in time you will see and feel so good you will want to do more and more before you know it you’ll be on your way to a healthy & strong body with great lifestyle changes.

RECIPE OF THE WEEK:

One of the things you count on if you were come into our home would be a jar of nuts & dried fruits. It’s great thing to grab if you are in a hurry and need something to hold you over. I usually purchase the raw mixed nuts at Costco or make up my own with nuts & seeds I have at home. Also, Costco has dried fruit without sulfates which I was really excited about because I’m allergic to sulfates. Feel free to make your own mixture.
Another really good snack I love to eat is Kale Chips, you can find many recipes on the web, but here’s my go to when I’m in a hurry.
There are many kinds of Kale to pick from the one I prefer is Dinosaur Kale.
I ALWAYS soak my veggies and fruit with a veggie wash, before I put them away to make sure I get off any reside due on them . I  purchase organic kale.
1. Put about 3 to 4 Tbsp of olive oil in a big bowl.
2. Put 2 Tbsp of fresh lemon.
3. Season with Himalayan salt, a pinch of cayenne, garlic salt (opt), onion salt (opt) really you can use any seasoning that you want. I love to try new things all the time.
4. Stir all together.
5. Lightly dry off the Kale and strip the dark green leaves off the stem.
6. Cut the leaves in 1/2 and toss in the olive oil mixture, make sure you mix really good, every leaf getting the oil on them.
7. Lay them flat on a cookie sheet.
8. Sprinkle with nutritional yeast for more of a cheesy taste. (I buy mine at Sprouts my most favorite store)
9. Place in the oven at 350 for 10 to 15 mins. depending on your oven. I use a dehydrator that works really good as well.
